Thanks to Fay I managed to get this far and to finally put out this "Good for you" recipe. It keeps well and moist and freezes too.
Fibre Feast Loaf.
125ml boiling water 1/2 cup
250ml raisins 1 cup
1 egg, beaten 1
250ml brown sugar 1 cup
250 ml buttermilk 1 cup
250ml whole wheat flour 1 cup
250ml rolled oats 1 cup
250ml high fibre cereal (I use fibre 1) 1 cup
50ml wheat germ 1/4 cup
7ml baking soda 1 1/2 tsp.
2ml salt 1/2 tsp
125ml applesauce 1/2 cup (not in the recipe but I've always added for a more moist loaf)
1. Preheat oven to 350F (180C)
2. Lightly oil a 1.5L (8" x 4") loaf pan with non stick spray.
3. In a large bowl, pour boiling water over raisins and leave to cool.
4. When cool, add egg, sugar and buttermilk.
5. In another bowl, combine remaining ingredients and mix well.
6. Stir dry ingredients into raisin mixture untill well blended.
7. Pour into prepared loaf pan. Bake 45 - 50 minutes, or until loaf tests done.
Makes 16 slices.

What's with this weather ???
Nice to see everyone out this a.m. great to see Margaret out & about..
There is talk of going to walk at the waterfront on Friday mornings at 9:00

We will have to decide when to where it.. July 1st is a Tuesday this year...

What a great day
Nice to see everyone out enjoying the great weather!! Here's another great recipe to go with the Moroccan Chicken.
MOROCCAN ORANGE SALAD
Vinaigrette
3 Tbsp. fresh orange juice
1/2 tsp. dijon mustard, 1/2 tsp. liquid honey
1/4 tsp. salt, 1/8 tsp. pepper
1 Tbsp. olive oil
1 glove garlic, minced
1 small serrano pepper, seeded & minced
1 tsp. finely graed orange zest
SALAD
8 cups lightly packed arugula leaves
3 large navel oranges, peeled & sliced 1/4"
1/2 small red onion sliced thin
1/2 cup majool dates, pitted & slivered
1/4 cup Moroccan black olives
1/3 cup unsalted natural pistachios, chopped coarse
In small jar put all vinaigrette ingredients & shake well
Line large platter with arugula..artly arrange other stuff on top, drizzle with dressing..garnish with
pistachios
Makes 8 servings

2 Tbsp. olive oil
1/2 cup chopped onion
1 clove garlic..minced
2 cups salsa
1/2 cup water
1/4 cup raisins
2 Tbsp. honey
1 tsp. cinnamon
1 1/2 tsp. cumin
Brown chicken in oil, place in baking dish
Sautee onion, garlic, spoon over chicken
Combine salsa, water, raisins, honey, cumin, cinnamon
Pour over chicken, cover & bake 1 hour @ 325 oven
Garnish with 1/2 cup toasted almonds
Serve with rice or couscous...serves 4

is it really spring???
Hi ladies...what about this weather? from my view here it is pretty cruddy out there...snow and all.....hope it is nicer tomorrow..we could all use some sunshine in our lives... Hope to see you all out on Tues.. Oh I forgot to mention the great lunch and equally good turnout that we had at Duffers on the 14th of March..thanks Margaret...
