Walking Jan. 4.2010

Hope everyone had a good Christmas..Not much walking between the holidays.

Here's a great recipe for the holiday's

This is a very festive recipe and so easy..Make it & get raves!!!
6-8 boneless chicken breasts (I cut them in half if they are very large)
1 1/2 Cups shredded mozzarella cheese
1 box stove top stuffing..chicken flavour
1 can of whole cranberry sauce
Spray large baking pan with Pam
Place chicken in pan in one layer
Cover chicken with the cheese
Cook stuffing as per package and sprinkle over the chicken & cheese
Spoon cranberry sauce over top & cover with aluminium foil
BAKE 1 - 1 1/2 hours until tender. Cover can be removed for last half hour

Brownies

1/2 Cup butter
2 x 1 oz. unsweetended chocolate baking squares, cut-up
1 1/2 Cups brown sugar packed
2 large eggs
1 tbsp. vanilla
1 Cup flour
3/4 Cup chopped walnuts (I use pecans)



Melt butter & chocolate in medium sauce pan over LOW heat, stirring often (don't leave unattended)..Remove from heat
Stir in brown sugar, add egg & vanilla, stir vigorously
Add flour & nuts. stir just to moisten
Turn into greaed 9 in. X 9 in. pan. BAKE in 350 degree oven for about 25 mins. or until wooden pick comes out clean...DO NOT overbake Remove from oven.

Immediatley....At this point I sprinkle chocolate chips on top so they melt & then spread them all over..
Presto..instant choc. icing with no effort at all.

Cut into 36 squares... Enjoy!!!
IRENE'S Hungarian Chicken

Spice 6 chicken thighs cut in half with garlic & seasoning salt
-pound to 1/2" thick with mallet
-dip in flour on both sides
-saute in oil till golden, (both sides) remove from pan
-in same pan sautee 1 large diced onion, 1/2 green, & 1/2 red pepper diced, 1 fresh diced tomato, 2 chopped cloves of garlic, 1 tablespoon paprika & 2 cups diced canned tomatoes..boil for a few minutes, return chicken to pan stir, add a lid & simmer for 20 Mins. or until chicken is tender, adding a bit of water if needed....should be a nice thick sauce.

You can use veal or pork tenderloin & recipe can be doubled, but only use 1 TBSP. of the paprika

it's been awhile

Well it certainly has been awhile since the last post was done..It's been a successful walking year with a good turn out of ladies on most of our walks..
A great lunch was had by all at Rachelle's house...yum..yum.. the pot luck was great..
Time to get out those yak-traks...as it's snowing now and the trails could get very slippery..
As usual recipes were requested and I am going to post a few..let me know if I have left any out..
