Thanks to Fay I managed to get this far and to finally put out this "Good for you" recipe. It keeps well and moist and freezes too.
Fibre Feast Loaf.
125ml boiling water 1/2 cup
250ml raisins 1 cup
1 egg, beaten 1
250ml brown sugar 1 cup
250 ml buttermilk 1 cup
250ml whole wheat flour 1 cup
250ml rolled oats 1 cup
250ml high fibre cereal (I use fibre 1) 1 cup
50ml wheat germ 1/4 cup
7ml baking soda 1 1/2 tsp.
2ml salt 1/2 tsp
125ml applesauce 1/2 cup (not in the recipe but I've always added for a more moist loaf)

1. Preheat oven to 350F (180C)
2. Lightly oil a 1.5L (8" x 4") loaf pan with non stick spray.
3. In a large bowl, pour boiling water over raisins and leave to cool.
4. When cool, add egg, sugar and buttermilk.
5. In another bowl, combine remaining ingredients and mix well.
6. Stir dry ingredients into raisin mixture untill well blended.
7. Pour into prepared loaf pan. Bake 45 - 50 minutes, or until loaf tests done.
Makes 16 slices.
